Asparagus is the shoot of the asparagus plant, called asparagus shoot. The colour can be white or green, depending on when it is harvested. White asparagus is harvested when it has not yet emerged from the ground, while green asparagus is harvested when the whole shoot is above ground and has turned green in the sun. White asparagus has a milder flavour, while green asparagus has a more intense flavour. There is also purple asparagus (also known as French asparagus), which is relatively rare, tasting somewhere between white and green asparagus. It can be used in many ways: soups, stews, salads, starters and side dishes.
The most delicious part of the asparagus is the head, which is the most tender and tasty. Lower down, the stem is more fibrous and the outer fibres may be slightly bitter. The closer the shoot is to the rootstock, the more bitter it is.
