It is used to obtain a fast and complete cleaning with good precipitation separation. It is effective in reducing the protein content of the wine and, at the right dosage, guarantees a stable protein wine.
Application:
Both must and fermented wine can be treated with bentonite.
-High-quality winemaking requires proper must purification. In this phase, the oxidative enzymes present in the must are drastically reduced. The use of Bentolit Super is particularly important in the processing of Botrytis-infected grapes.
-During the fermentation phase, it promotes a uniform and complete fermentation, resulting in a clean new wine at the end of the process, with little precipitation.
-If wine is treated, it results in complete clarification and reduces the protein content.
Dosage:
A laboratory test is recommended before treatment to determine the optimum dose, with particular attention to protein stability.
