Although some wines were recorded as smelling of hydrogen sulphide as early as the 19th century, it is still not clear how they develop and how to prevent them. The elimination of hydrogen sulphide, mercaptan and aromatic aromas without significantly affecting the organoleptic characteristics of the wine is a major challenge for winemakers every year. Kupzit is an innovative product that is highly effective in eliminating hydrogen sulphide odours without giving the wine a metallic taste after treatment. After treatment, there is usually no need for bluing. The use of Kupzit has been authorised throughout the EU since August 2009.

The new copper citrate preparation Kupzit is a new development for the treatment of hydrogen sulphide in wine, fruit wine and other fermentation products.

Dosage and administration
Pre-testing is always recommended for optimal treatment. Usually the dosage is 5-20 g /
100 l, in special cases 50 g/100 l or more (taking into account the national regulations in force in the country concerned).
Dissolve in wine at a ratio of 1:10 before administration. When adding to the volume to be treated, take care to
mix well. The treatment takes effect in a few minutes. Separate the resulting sediment by filtration 1

Under normal conditions of use, there will be little or no disturbing increase in copper content
occur. Therefore, after treatment with Kupzit, in most cases no additional bluing is necessary.
It can be applied alone or in combination with bleaching, or in combination with Böcksin. Combined debridement

Storage
Kupzit should be protected from moisture, light and odours. Opened packages should be carefully resealed.
Special remarks
Compared with other odour control agents used to date, Kupzit has the following properties:
- Kupzit is a biotic product,
- the citric acid in Kupzit corresponds to the citric acid naturally occurring in wine,
- Kupzit has a high reaction specificity,
- Kupzit reacts with off-flavours without any detectable copper excess,
- therefore, subsequent bluing is usually not necessary,
- silver ions are not introduced,
- The effect is comparable to that of silver chloride preparations,
- easy handling and dosing due to the granular structure.
